Boli is a golden yellow sweet crepe popular in south India. Bolis are delicate maida crepes flavored with clarified butter, cardamoms and filled with bengalgram dal (split yellow peas), sugar and gingelly oil (sesame oil). It is prepared by shaping the above cooked fillings into a ball shape and wrapping them with the soft dough, then pressed to flatten and pan grilled. It is usually served last in the traditional feast with
kheer.
