Tama is a non-fermented bamboo shoot curry very common in
Sikkim. This unique and classic Sikkimese curry is made from some varieties of young bamboo shoots commonly grown in the Sikkim Himalayas. The bamboo shoots are cut into slices and then boiled in water with turmeric powder, chillies and salt for a few minutes to remove bitter taste of bamboo. Sikkimese consume this curry with rice. It is commonly sold in the local markets during the months of June to September when young bamboo shoots sprout.
