Paya




Paya is a sort of spiced trotters broth which comes in a thick sauce. It is a sauce made from the hooves of mutton or lamb stewed in a mixture of spices. It is a rich, nourishing and warming food eaten for breakfast, especially in winter. This excellent curry of gelatinous consistency is eaten with either parathas or appam.
