Ole Bella




Ole Bella means Palm jaggery. This is like sugarcane jaggery, only it is healthier, and the preferred one in Mangalore. It is made from the extract of the palm tree. The palm tree's sap is boiled and then it is cooled and poured into a long cone made of palm leaves. The cone is then wrapped in rice straws and preserved. At the time of use, the cone is finely sliced and cut into a disc with a palm ribbon around the edge. Mangaloreans use Ole Bella to prepare puddings and sweets.
