Kosumbari is the most popular salad from
Karnataka. This salad is synonymous with festivity and is usually prepared on
shivratri when housewives fast the whole day and need something to sustain them. This salad is made of the broken halves of soaked skinless green lentils, spiced with salt, green chili and mustard seed and mixed with tiny scrapings of coconut, cucumber and carrot and dressed with a little lime juice. Rich in proteins and vitamins, this salad is very simple to make and the end result is simply delicious.
