Basically a Kashmiri delicacy, Kashmiri Dum Aloo is made in other parts of India as well. This exotic dish is a medium hot vegetarian curry of small potatoes cooked slowly in spiced sauce with yogurt and ginger. The Kashmiri red chili gives the dish a wonderful red color.
