Chhurpi

Chhurpi is a sort of tasteless Himalayan chewing gum made from milk. It is a fermented dairy product made from whole milk, skimmed milk or butter milk. This hardened cheese is traditionally produced from yak or chauri milk in the Himalayan region of Sikkim and is widely consumed by Himalayan people as a source of nutrients, and is chewed to maintain salivation during mountain climbing. Chhurpi is also mixed with Ningro, an alpine fiddle-head fern, to make a household dish.
