Bebinca is a wonderful Goan sweetmeat, introduced by the Portuguese. This many layered dessert is made up with flour, eggs, milk and sugar. The extract of coconut milk and other delectable ingredients are used to make this delicious sweet. Bebinca or Bibique is traditionally baked over a slow fire with glowing coals on top of the pan lid, so that it is baked from the top as well. Each layer is baked before adding the next one and the traditional version has 16 layers.
