Originally a Muslim dish, Baingan Bharta is very popular in the north-western parts of India, especially in
Punjab and
Rajasthan. This north Indian spicy vegetable dish made of mashed eggplants is served as a main course or as a buffet item. The main ingredients are eggplant, cumin seed, cinnamon sticks, onions, soya oil, coriander, tamarind, paprika, and cayenne pepper. Delicious Baingan Bharta is usually served with pita bread, Indian naan, or rice.
