Unlike the rest of
Maharashtra, the cuisine of
Aurangabad is highly influenced by the North Indian method of cooking and Hyderabadi food. Fragrant pulaos,
biryanis and delectable sweets are the main items. Meat is cooked in fresh spices and herbs. Important spices used are chilly, cumin seed, dill, fennel, fenugreek and garlic. Nawabi Biryani and the sweets of Mughal origin are the specialty of Aurangabad cuisine.
