Payasam is a sweet pudding served after a hearty Kerala meal. The chief ingredients are green gram, cardamom, cashew, water, raisins, jaggery (sharkara), and coconut or fresh boiled milk. Payasam can be made of ripe banana, fried jackfruit pulp, channa dal, rice ada and wheat. Pal Payasam is a variant form made using milk, sugar, rice or vermicelli.
Payasam is very often served as a favorite offering to deities in temples.
