Sarkara Upperi, an indispensable item of the
Kerala Sadya, is a thick banana snack made by dipping banana chips in molten jaggery. It is doubly thicker than the usual banana chips and is half moon shaped, about 3 mm in thickness. It is fried in coconut oil and then put in Sarkara paavu (melted jaggery) for sometime. Some people also add powdered pepper, dried ginger and cardamom for flavour.
